Well, they are teensy baby plants, as you might imagine. And those tiny plants are loaded with concentrated flavor and nutrition.
Best eaten raw, they do a great job at filling out a flavor profile.

Before there was refrigeration, humans were preserving food by fermenting it. It turns out that fermentation isn’t just for wine and beer. Olives are fermented. Sauerkraut and pickles are supposed to be fermented (although they’re usually not, these days).
